Southerleigh at Pearl hosting a collaborative dinner with Spanish chef Jorge Fernández Rodríguez

When it comes to fine dining in the Spanish tradition, the Olé Intercambio Dinner Series at the Pearl has focused on bringing over premier chefs and food experts of the Spanish culinary world.

The next installment of this series, in partnership with chef Jeff Balfour of Southerleigh Fine Food & Brewery, invites chef Jorge Fernández Rodríguez of Gastrochigre in Madrid to create a dinner menu inspired by the food of the Asturias region of Spain.

The dinner will begin with a welcome reception with a menu by Balfour featuring dishes such as mini picadillo rellenos, bacalao Magdalena and Mexican chorizo and gulf crab croquette, with beer pairings from Spoetzl Brewery.

The reception will lead into a seated dinner featuring Rodríguez’s menu. It will include: sweet and sour pig ears salad; callos (tripas) with kale kimchi, mushrooms and vermicelli noodles; deep-fried hoisin duck with spicy carrot hummus; rice and beans Asturias-style with saffron-scented beef cheek; and rice pudding with chocolate and stout beer.

Each dish will be paired with a beer by Southerleigh Brewing Co., including a blood orange- and lime-infused kettle sour created for the occasion.
