Gorlami Pizza will open at Avanti Food & Beverage

Charles Troup has had his share of fine dining, having worked indoors at some of Denver and Boulder’s finest restaurants, including Oak at Fourteenth, Safta and Departure. But his two new adventures are decidedly more relaxed. Last fall, he opened Boychik with Chef Chase Devitt, specializing in shawarma and hummus bowls, at Avanti Boulder, and now he’s set to debut Gorlami Pizza at the original Avanti Food & Beverage in LoHi. .

Gorlami Pizza is named after Brad Pitt’s attempt to impersonate an Italian actor in the movie Inglourious Basterds (Pitt says “Gorlami” with a heavy Texas accent instead of “Gorlomi”). So the clue is already there that the pizzas will not strictly adhere to the Italian tradition. “I call it the ‘Crispy Naples’ style,” says Troup, noting that the pies will cook at a slightly lower temperature for a longer time than standard Neapolitan pizzas to give them a crispy crust instead of a soft crust. .

Gorlami takes over the space previously occupied by Brava Pizzeria, so a brick oven was already in place. The pizzas will be topped with all the classics, with meats sourced from River Bear American Meats, plus a few house creations. Troup says he doesn’t care what goes on a pizza, so you’ll find charred broccolini on one, pineapple on another. But it won’t just be canned fruit slices; Gorlami will make pineapple marmalade.

Other items on the menu will include cheese and charcuterie plates and bowls of whipped ricotta with savory toppings (olives, Calabrian chili oil and roasted pepper jam, for example) and homemade flatbread.

Although Troup’s restaurant experience has been primarily in management, he says he’s picked up valuable advice from his former employers. “You have to take the opportunity to learn from the great people you work with,” he says, pointing to Bryan Dayton and chef Steve Redzikowski at Oak, Gregory Gourdet at Departure and Alon Shaya at Safta. Redzikowski, who recently started his own pizza project, New Yorkese, at Avanti Boulder, has been especially helpful on the pizza side, adds Troup.

Gorlami joins Del Mar by Rooted as new Avanti counters, both located on the ground floor of the food hall. Meta Asian Kitchen, Quiero Arepas, Bistro Georgette, Knockabout Burgers and Lea Jane’s Hot Chicken are also currently open. It’s the first time in months that Avanti has its full complement of seven suppliers.

Troup hopes to open Gorlami by the end of March at 3200 Pecos Street, with hours of 11 a.m. to 10 p.m. Sunday through Wednesday and 11 a.m. to 11 p.m. Thursday through Saturday. Visit Avanti website for details and ordering for all suppliers.
