Three-star Spanish chef opens modern temple of Basque cuisine – Robb Report


One Aldwych hotel in London now welcomes three Michelin star chef Eneko Atxathe new eponymous restaurant of ( His menu celebrates modern Basque cuisine, similar to what he offers in his famous restaurant Azurmendi near Bilbao.

Push open the restaurant’s heavy cast iron doors and descend its spectacular copper staircase to the contemporary basement dining room. High-ceilinged but intimate, this beautiful candlelit atrium is, like the food, both rustic and luxurious. The Memories of the Bay of Biscay seafood appetizer of oysters and herring roe takes the lead, theatrically accompanied by its own smoke machine in the form of fresh seawater poured over dry ice. Meanwhile, entrees include a rich oxtail stew raised beyond its humble origins with a mushroom emulsion and decorative nasturtiums. The meal ends with a traditional Basque torrija sponge, rich, subtly sweet and soaked in milk, accompanied by a delicious ice cream made with sheep’s milk.

The restaurant’s distinctive combination of simplicity and sophistication is reflected in the wine list, a thoughtful selection of exclusively Spanish wines. Here, the “house wine” is aptly named – several

the wines are produced by Atxa and her uncle. Such touches are just one of the reasons this restaurant is a welcome addition to London’s vibrant dining scene.
